EASY APPLE CAKE 
2/3 c. oil
2 eggs
3 c. diced and peeled apple
1 1/2 c. sugar
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tbsp. vanilla
1 c. chopped walnuts or pecans

Preheat oven to 325 degrees F. Grease a 913 inch pan.

In a large bowl beat the oil and eggs until foamy. Stir in apples and sugar. Mix dry ingredients together in a bowl and add to the apple mixture. Stir in vanilla and nuts. Pour into prepared pan. Bake for 45-50 minutes or until top springs back when touched lightly.

Can frost with cream cheese frosting or sprinkle with powdered sugar.
