FLORENTINE BEEF CASSEROLE | |
1 lb. lean ground beef 1 med. onion, chopped 1/4 lb. fresh mushrooms, sliced (can use canned) 1 clove garlic, minced 1 tsp. dried oregano leaves 2 tbsp. all purpose flour 1 can beef broth 1 c. sour cream 1 (10 oz.) pkg. frozen chopped spinach, cooked and drained 4 oz. sliced Mozzarella or Jack cheese Brown meat, onion, mushrooms, garlic, and oregano. In quick shake, mix flour and beef broth; stir into meat. Stir in sour cream and spinach. Put meat mixture into a 1 1/2 quart casserole dish. Cut cheese into strips or grate on top casserole. Bake at 350 degrees for 15-20 minutes or until casserole is heated through and cheese is melted. 4 servings. |
