CABBAGE-BEEF CASSEROLE 
1 lb. ground beef
2 med. onion, sliced
1 med. cabbage (about 2 lbs.) coarsely shredded
2 med. carrots
2 1/2 tsp. salt
1/4 tsp. pepper
3/4 c. long grain rice
1 (13 3/4-14 1/2 oz.) can beef broth
1/2 c. water

(Beef cubes may be substituted). About 1 3/4 hours before serving - cook ground beef and onions in 5 quart saucepan over light heat until juices evaporate and meat is well browned. Remove pan from heat. Add cabbage, carrots, salt and pepper. Toss to mix well. Pour rice into casserole and beef mixture - on top of rice. Pour beef broth and water over mixture. Cover casserole. Bake at 350 degrees for 1 hour.
