POTATO SOUP 
5 med. chopped potatoes
1/2 c. celery
1/4 c. onion
1 tbsp. butter
Salt and pepper to taste
1 tsp. parsley flakes
1 lb. Velveeta cheese
2 tbsp. corn starch
1/3 c. milk

Place enough water in large pan to cover potatoes, add celery, onions, butter, parsley, salt and pepper. Boil and simmer for 15 minutes or until potatoes are tender. Add cheese, stir until cheese melts (cubing the cheese makes this go faster). Mix cornstarch and milk and add to thicken. You can add broccoli to this also.
