RED BEANS AND RICE 
1 lb. smoked sausage
1 med. onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2 (15 oz.) cans kidney beans, drained
1 (16 oz.) can tomatoes, chopped and undrained
1/2 tsp. dried whole oregano
1/2 tsp. black pepper
Hot cooked rice

Cook sausage over low heat 5-8 minutes. Add onion, garlic and green pepper. Saute until tender. Drain if necessary. Add beans, tomatoes and seasonings. Simmer, uncovered, 20 minutes. Serve over rice. Yield 4-6 servings.
