AUNT IDA'S EASY SHRIMP SALAD | |
My husbands' great Aunt Ida made this for holiday celebrations for many years and the whole family loved it! Tomatoes, peppers, celery could be added too. And croutons never hurt any tossed salad :) 1 head of lettuce 1/2 red onion, thinly sliced (any onion will do) 1 can of tiny to medium sized shrimp stuffed green olives (sliced thin) 1 small jar pimento (optional) mayonnaise Break the lettuce into bite size pieces. Add onion, shrimp and as many olives as you like, I probably use about 10-12. Add pimento. Spread a good dollop of mayonnaise over mixture and toss gently until all coated. Shrimp will break up some doing this but that's OK, the flavor just spreads around more. Submitted by: Karen Bright |
