COCONUT ICE BOX COOKIES 
1 c. shortening
1 c. sugar
1 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
3 c. quick cooking oats
1/2 c. coconut
1 1/2 c. flour

Mix ingredients in order given. Form into 2 rolls and freeze overnight. When ready to bake cookies, cut dough into 1/4 inch slices. Bake at 350 degrees about 8-10 minutes on a lightly greased baking sheet. Makes about 4 dozen.
