KEY LIME CHEESECAKE 
1 (9 inch) graham cracker crust
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle sweetened condensed milk
1/3 c. key lime juice
1 tsp. vanilla

In large mixer bowl, beat cheese until fluffy. Gradually beat sweetened condensed milk until smooth. Stir in key lime juice and vanilla. Pour into crust. Chill 3 hours or until set. May be topped with favorite fresh fruit or canned pie filling.

I followed the recipe going slightly over with the cheese cake like, 1.25 pkgs and I didn't have key lime so I used regular fresh squeezed lime juice and put some of the pulp in there and it turned out fine and it was tart.
