TEX-MEX CRUSTLESS QUICHE 
1/2 c. butter, melted
10 eggs
1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 lb. lg. curd cottage cheese
1/2 lb. Jack cheese, shredded
1/2 lb. Colby, shredded
1 packet taco seasoning
1/2 c. chopped green olives
1 sm. can chopped mild green chili peppers

Beat eggs. Add flour, baking powder, salt, cottage cheese, melted butter, 1/2 of the cheese, taco seasoning, olive and chili peppers.

Pour mixture into a greased 9x13 casserole. Top with remaining cheese. Bake at 400 degrees for 15 minutes, reduce temperature to 350 degrees, bake for an additional 35 to 40 minutes.
