JELLO BEET SALAD 
3 (4 oz.) pkgs. red Jello
3 1/2 c. boiling water
1 can beets
1 lg. can crushed pineapple
1/2 c. pickle juice
Cool Whip

Mix Jello and boiling water. Cool. Drain pineapple juice into 2 cup measure. Add beet juice to make 2 cups. In mixer - blend beets until slightly mixed. Add to Jello and pineapple. Spread mixture in a 9 x 13 inch pan. Mix 1/3 cup mayonnaise with Cool Whip and spread over above mixture.
