APPLE CAKE 
1 1/2 c. vegetable oil
1 1/2 c. sugar
3 eggs
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
3 c. diced, tart raw apples
1 c. chopped black walnuts
2 tsp. vanilla

GLAZE:

2 tbsp. butter
2 tbsp. brown sugar
2 tbsp. sugar
2 tbsp. milk mixed with 1/2 tsp. vanilla

Combine the oil and sugar with electric mixer; mix well. Beat in the eggs. Sift the flour, soda, cinnamon, nutmeg, and salt together, then sift over the beaten liquid ingredients and combine well. Add apples, nuts, and vanilla. Beat well. Pour batter into a 9 inch tube pan and bake at 325 degrees for 1 1/2 hours or until toothpick inserted comes out clean. Remove from oven and let cake rest in pan. Make Glaze.

Glaze: Combine all ingredients in a saucepan and bring to a boil. Boil 1 minute. Turn cake onto a rack. Place on plate. Poke holes in cake and pour glaze over the warm cake.
