LIGHT SWEET POTATO BISCUITS 
These are so delicious, if you never liked sweet potatoes.. You will surely eat them now! Our family love to serve molasses over warm sweet potatoes, its almost like a dessert!

1 1/2 cups all-purpose flour
3/4 tsp. salt
2 1/4 tbsp. sugar
4 tsp. baking powder
1/2 cup shortening
1/4 cup milk
1 1/4 cup mashed cooked sweet potatoes

Sift flour, salt, sugar and baking powder together, cut in shortening. Combine milk and mashed sweet potatoes. Roll or pat into a ball about 1/2-inch thick. Bake them at 425°F for 15 minutes.

SERVE WARM AND TOP IT WITH HONEY OR MOLASSES.
