UPSTATE MINESTRONE SOUP 
1 lb. Italian sweet sausage
1 tbsp. olive or vegetable oil
1 c. diced onion
1 clove garlic, finely minced
Chopped parsley
1 c. sliced carrots
1 tsp. basil
2 c. finely chopped cabbage
2 sm. zucchini, sliced
1 can (1 lb.) tomatoes, chopped
2 cans beef broth
1 tsp. salt
1/4 tsp. pepper
1 can (1 lb.) great northern beans (undrained)

Brown sausage, add garlic, parsley and basil. In kettle add carrots, cabbage, zucchini, tomatoes, broth, beans and salt and pepper. Cook for 1 hour. Delicious.
