ENCHILADA PANCAKES 
PANCAKES:

1 box cornbread mix
1 egg
1 to 1 1/2 c. milk

Mix according to package directions but add enough milk to make a pancake batter consistency. Cook as you would pancakes. Keep warm.

SAUCE:

1 lg. jar or can of your favorite spaghetti sauce
1 (15 oz.) can your favorite chile without beans
1 (15 oz.) can red kidney beans

Mix together and simmer until hot.

Top pancakes with sauce and garnish with shredded cheese, lettuce, onion and tomato.
