AMISH SUGAR COOKIES 
1 c. sugar
1 c. powdered sugar
1 c. butter
1 c. oil (I use Wesson Canola oil)
2 eggs
4 1/2 c. flour
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cream of tartar

Combine sugars, butter, oil and beat well. Stir in eggs, flour, vanilla, soda, salt and cream of tartar. Roll dough into 1 inch balls. Flatten ball with bottom of glass dipped in sugar. Cookies spread as they bake so bake only 9 per sheet. Bake at 350 degrees for about 12 minutes until very lightly golden. Don't over bake. Freeze well and are great with jam or jelly on top.
