CHEESE & PEPPER STUFFED BEEF ROLL | |
1 lb. lean ground beef 1 c. bread crumbs 1 egg, lightly beaten 1 jar (16 oz.) Marinara sauce, divided 1 c. shredded Mozzarella cheese, divided 3 tbsp. grated Parmesan cheese 1 clove garlic, minced 1 red and/or green peppers, sliced Preheat oven to 350 degrees. Grease baking sheet, set aside. In bowl, combine first 3 ingredients and 1/4 cup marinara sauce. Reserve 2 tablespoons Mozzarella cheese. In another bowl, combine remaining Mozzarella and Parmesan cheese and minced garlic. On 15 inch piece of plastic wrap place beef mixture. Top with another piece plastic wrap. With rolling pin, roll out beef to 14 x 11 inch rectangle. Remove top sheet of plastic wrap. Spread cheese mixture over beef to 1/2 inch of edges. Top with pepper slices. Starting from short end, roll beef, removing plastic wrap. Place seam side down on pan. Sprinkle with reserved Mozzarella. Bake 30 to 35 minutes or until cooked through. Serve beef slices with remaining warmed marinara sauce. |
