CHEESE - TOPPED TACO PIE 
1 lb. ground beef
1 (1.25 oz.) pkg. taco seasoning mix
1 (16 oz.) jar thick & chunky salsa
1 (4 oz.) can mushrooms, sliced
1 (2.8 oz.) can French fried onions
1 (9 1/2 inch) baked pastry shell
1 c. Ricotta cheese
8 oz. taco flavored shredded cheese
2 eggs
1 sm. tomato, seeded & diced

Brown ground beef in large skillet. Drain. Stir in taco seasoning mix and salsa. Bring to a boil; reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally. Add mushrooms and half of French fried onions. Spoon into baked shell. In a small bowl, combine Ricotta, 1 cup of taco flavored cheese and eggs; mix well. Spoon over meat mixture. Sprinkle with cheese. Bake for 25 to 35 minutes in 350 degree oven. Remove from oven and top with remaining French fried onions. Bake 2 to 3 minutes more. Sprinkle tomatoes around edge. Let stand 10 minutes before serving.
