CHILI POTATO CASSEROLE 
1 tbsp. salad oil
1 lb. ground beef
1 med. sized onion, chopped
1 lg. or 2 med. potatoes
1 (15 1/2 oz.) can chili without beans
1 med. can kidney beans
3 sm. tomatoes, sliced
3 or 4 slices bacon

Pour oil into bottom of a 3-quart casserole. Arrange a single layer of ground beef over the oil. Cover with chopped onions. Continue to layer, sliced potatoes, then the chili, beans, and sliced tomatoes. Arrange bacon over the top. Cover and bake for 1 hour and 30 minutes in a moderate over (350 degrees). Serves 8.
