POULTRY BRINE 
1 gallon vegetable broth
1 cup salt
1/2 cup brown sugar
1 tbsp. peppercorns
1/2 tbsp. allspice berries
1/2 tbsp. candied Ginger

Bring to a boil and turn heat off and let the brine come to room temperature. Then transfer to another container large enough for your turkey. Add a gallon of heavily iced water, then add turkey to the brine and let it sit 6 to 10 hours.
