SMOTHERED ROUND STEAK IN ONIONS 
3 lb. round steak, 1/2 inch thick
2 tbsp. vinegar
1 tbsp. salt
1 tsp. black pepper
1/2 tsp. cayenne pepper
Flour
3 tbsp. oil
3/4 c. water
1 lg. onion, sliced thin

Pound steak to tenderize and thin it slightly; pour vinegar over steak and season with salt, black pepper and cayenne pepper. Dredge steak with flour and brown in hot oil on medium heat on both sides in a covered skillet; add 1/2 cup water. Cover and simmer about 30 to 45 minutes.

Remove steak from skillet, add onions and cook until onions are brown. Add remaining water and return to skillet. Cover and continue to simmer for 30 minutes. Serve over cooked rice.
