RAISIN BARS
1/2 to 3/4 c. butter
1 c. brown sugar
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. oatmeal

Cream butter and sugar. Sift flour, soda, salt and add to butter and sugar. Add oatmeal and 1-2 tablespoons water. (This mixture is very crumbly - I frequently add a bit more water.) Pat 1/2 of the crust in a greased 13x9 pan. Spread with raisin filling. Mix remaining crumbs with 1 tablespoon water. Sprinkle over filling, pat smooth. Bake at 350 degrees for 35 minutes. When cool drizzle icing on top.

RAISIN FILLING:

1/4 c. sugar
1 tbsp. cornstarch
1 c. water
2 c. raisins

Mix sugar and cornstarch; add water and raisins. Cook over medium heat until thick. Let cool.

CINNAMON ICING:

1 c. sifted confectioners' sugar
1/4 tsp. cinnamon
2 tbsp. milk (enough for drizzling)

(This is also good for date bars. Just substitute 2 cups chopped dates for raisins. I'd use only 2 tablespoons sugar since dates are so sweet.)
