CAROUSEL MANDARIN CHICKEN 
5 c. white chicken, cooked and diced
2 c. celery, diced
4 tbsp. lemon juice
2 tbsp. minced onion
2 tsp. salt
2/3 c. Dukes mayonnaise
2 c. seedless green grapes
2 (11 oz.) can mandarin oranges (do not mix in)
1 c. toasted slivered almonds (I use more, probably 3 c.)
Leaf lettuce

Combine chicken, celery, lemon juice, onion and salt. Chill well. Add salad dressing, grapes, almonds to chicken mixture. Toss well. Serve on lettuce leaf. Garnish with orange slices, if desired.
