MANDARIN CHICKEN SALAD 
3 c. cubed, cooked chicken
1 1/2 c. cooked rice
1 c. diced celery
1 (11 oz.) can mandarin oranges, drained
1 (8 3/4 oz.) can pineapple tidbits, drained
1/2 c. toasted slivered almonds
3/4 c. mayonnaise
1/2 tsp. salt
1/8 tsp. ground marjoram

Combine first six ingredients. Chill. Blend together mayonnaise, salt and marjoram. Toss.

The secret here is to cut the fruit into bite size pieces and balance the rice and fruit to bite mixture.
