VICTORIA'S PEACH COBBLER | |
2 (16 oz.) cans sliced peaches 1 1/4 c. sugar 1/4 tsp. cinnamon 1/4 lb. butter 1/2 tsp. yellow food coloring Cut butter into small pieces and combine with other ingredients. Set aside for 5 minutes to let sugar dissolve. CRUST: Mix 1/2 teaspoon salt and 2 teaspoons sugar with 1 1/2 cups flour. Cut in 1/2 cup shortening until mixture resembles coarse cornmeal. Gradually sprinkle 3-4 tablespoons cold water (more if needed to hold mixture together) over flour and mix with fork. Form a ball with 3/4 of dough. Roll out dough to cover bottom of a 2- quart rectangular baking dish. Pour filling over crust. Roll out remaining dough and cut into strips. Arrange in a lattice design over filling. Bake in a preheated 450 degree oven for 20 minutes or until crust is golden. Serves about 12. |
