COCONUT BREAD 
2 3/4 c. flour
1 c. sugar
1 tbsp. and 1 tsp. baking powder
1 1/4 c. coconut
1 1/2 c. milk
1 egg
2 tbsp. oil
1 tsp. coconut extract

Mix together first 3 ingredients. Add coconut and blend well. Combine milk, egg, oil and extract in another bowl, mix well. Add all at once to dry ingredients, stir just until blended. Pour into 2 greased loaf pans. Bake at 350 degrees for 45 minutes. Cool in pans 10 minutes, remove from pans, let cool. Slice thin and toast for breakfast. Delicious.
