COCONUT BREAD 
2 c. flour
3/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. moist coconut
1 c. milk
1/4 c. oil
1 egg, well beaten
1 tsp. vanilla

Combine flour, sugar, baking powder, salt and coconut in a large bowl. Mix milk, oil, egg and vanilla in a small bowl. Add milk mixture to flour mixture. Stir until blended. Butter and flour a 9x5 inch loaf pan and bake at 350 degrees for 50-55 minutes or until golden brown. Cool to room temperature before slicing.
