2 (8 oz.) pkgs. cream cheese, softened 2 beaten eggs 3/4 c. sugar 1 tsp. vanilla 1 tsp. lemon juice 1 box vanilla wafers 1 (16 oz.) can cherry pie filling, can use light Mix first five ingredients with mixer until smooth. Line cup cake pans with foil cup cake papers. Drop one vanilla wafer in bottom of each paper. This is the "crust". Fill each 3/4 full with cheese mixture. Bake 17 minutes at 375 degrees. Cool. The centers will drop. Top each with a spoon of the cherry pie filling. |
