INDIVIDUAL CHEESE CAKES 
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tbsp. vanilla

Line muffin tin with fancy cupcake papers and place a vanilla wafer in the bottom of each. Mix the cream cheese, sugar, eggs, lemon juice, and vanilla until well blended. Fill each paper cup about 3/4 full with this mixture. Bake at 350 degrees for 15 to 20 minutes. Cool. Top with a teaspoon of your favorite pie filling or a dollop of jelly or jam.

Makes 24 cakes.
