BUTTERSCOTCH PUDDING 
3 tbsp. cornstarch
3 c. milk
1 1/2 tbsp. butter
1 1/2 c. brown sugar
1/4 tsp. salt
1/2 tsp. vanilla extract
1/2 c. heavy cream, whipped

Mix cornstarch with 1/2 cup of the milk and scald remaining milk in double boiler. Melt butter, add sugar and salt and cook until sugar melts, stirring constantly. Add slowly to hot milk, stirring until well blended. Add cornstarch mixture, stir until thickened. Cover and cook 25 minutes. Cool and add vanilla. Top with whipped cream. Serves 6.
