FRENCH CRULLERS | |
1 c. flour 1 c. water 1/4 lb. (1 stick) butter 2 tbsp. sugar 1/4 tsp. salt 4 eggs In a saucepan heat the water and add butter. Cook until butter is melted. Combine flour, sugar and salt. Add to hot mixture. Mix all at once. Cook until mix forms a ball and is real firm. Cool slightly, add eggs one at a time and beat until the egg is thoroughly mixed. After all four eggs have been added put the dough in the refrigerator and chill for several hours. When ready to fry, put oil in a deep pan. Heat oil to 360 degrees. Drop one teaspoon of dough at a time. The crullers will double in size so leave plenty of room. It takes 15 minutes to fry. After they are fried, put on a frosting glaze. |
