BANANA NUT CAKE 
2 1/4 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 tsp. salt
2/3 c. solid shortening (Crisco)
3 eggs
1 1/4 c. mashed ripe bananas (about 3 med.)
2/3 c. finely chopped nuts

Heat oven to 350 degrees. Grease and flour 13 x 9 x 2 inch pan. Measure all ingredients into a large mixing bowl. Blend 1/2 minute on low speed scraping bowl constantly. Pour into pan. Bake 45-50 minutes or until wooden pick inserted in center comes out clean.

BUTTERCREAM FROSTING:

2 1/2 c. powdered sugar
1/3 c. softened butter
1 tsp. vanilla
Light cream or milk

Mix all ingredients together. Add enough light cream or milk until frosting is easy to spread.
