VEGETABLE CASSEROLE 
1 (20 oz.) pkgs. California Blend frozen vegetables or 16 oz. pasta Accent frozen vegetables (I use Cheddar type)
1 can Durkee French fried onions, large, if doubled
8 oz. Velveeta cheese, cut in cubes (if doubled, use 3/4 c.)
20 Ritz crackers, crushed
1/2 c. butter, melted (if doubled, don't use 1 c., use 3/4 c.)

Layer frozen vegetables in a 9 x 13 inch glass dish, onion rings, and cheese cubes. Mix crushed Ritz crackers and butter and put on top. Bake at 350 degrees for 30 minutes. (If in a hurry or doubling recipe, I put vegetables in a glass dish and microwave for 12 minutes to give a head start). Then place in oven at 350 degrees for 30 minutes. I have reheated in a crock pot for luncheons. Doubled recipe fits in a 9 x 13 inch glass dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
