NEW TUNA NOODLE CASSEROLE | |
8 oz. farfalle (bow tie pasta) or medium (with egg noodles) 1 (8 oz.) pkg. Neufchatel or cream cheese, softened 1 c. sour cream 1/2 c. milk 1 (6 1/8 oz.) can tuna (packed in water), drained and flaked 1/4 c. chopped green onions 2 tbsp. finely chopped red bell pepper 2 oz. Cheddar cheese, grated (1/2) salt and pepper to taste Preheat the oven to 375°F. In a stockpot, bring 4 quarts of water to a boil. Partially cook noodles in the boiling water for half the time given in the package direction. Meanwhile, grease a 1 1/2-quart casserole. In a large bowl, combine cream cheese, sour cream and milk until smooth and creamy. Stir in flaked tuna, chopped green onions and chopped bell pepper. Season with salt and pepper. Drain the noodles thoroughly and stir them into the tuna mixture. Place the noodles in the prepared casserole and sprinkle with cheese. Bake until the mixture is bubbly and the top is browned, about 25 minutes and serve. Lasagna-Style Bow Tie Pasta: 1 tbsp. vegetable oil 1 small yellow onion, chopped 8 oz. ground turkey or lean ground beef 1 (14 oz.) jar prepared plain spaghetti sauce 1 c. part-skim Ricotta or low-fat cottage cheese 1 large egg 2 tbsp. grated Parmesan cheese 4 oz. Mozzarella cheese, grated (1 c.) Preheat oven to 425°F. Grease an 8-inch square baking dish. In a stockpot, bring 4 quarts of water to a boil. Partially cook pasta in the boiling water for half the time given in the package directions. Meanwhile in a large skillet, heat oil over moderate heat. Add onion and saut for 1 minute. Stir in ground turkey and cook until it is lightly browned, about 3 minutes. Add spaghetti sauce; bring to a boil. Reduce the heat to low, partially cover the skillet and simmer the sauce for 5 minutes. In a small bowl, combine Ricotta, egg and Parmesan. Drain the pasta thoroughly. Layer half of the pasta in the prepared baking dish. Spoon the cheese mixture and sprinkle with half of the Mozzarella. Layer the remaining pasta, sauce and Mozzarella. Cover the pan with aluminum foil and bake for 15 minutes. Uncover the pan and bake an additional 5 to 8 minutes or until heated through and serve. |
