SPINACH CASSEROLE 
1 pkg. frozen chopped spinach (cooked)
1 pt. cottage cheese
4 eggs
4 tbsp. flour
3/4 lb. Velveeta cheese, cubed
1/4 lb. butter, softened

In mixer beat eggs, add cheese, flour, butter, and Velveeta cheese. Fold spinach into cheese mixture. Bake in 7 x 11 inch greased casserole at 350 degrees, 30 to 40 minutes. Let set 10 minutes before serving (until firm). Serves 8 to 10. You can substitute chopped broccoli.
