1 med. onion, thinly sliced 1 med. green pepper, coarsely chopped 1 1/2 tsp. butter (may use low calorie) 1 med. eggplant, peeled & cut into 3/4 inch cubes 1 (1 lb.) can tomatoes 1/2 tsp. salt 1 tsp. sugar Saute onion and green pepper in butter until onion is golden. Add eggplant cubes, tomatoes, salt and sugar; cover and simmer 10 minutes or until eggplant is just tender. Yield: 6 servings. 40 calories per serving. |
