DEVILED CRAB 
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/8 tsp. dried mustard (opt.)
1/8 tsp. Worcestershire sauce (opt.)

Melt butter in heavy skillet. Add flour, stir until combined. Blend in milk, cook until thickened. Add mustard and Worcestershire sauce. Stir; set aside until cool.

PATTIES:

1 lb. crab meat
1 egg
3/4 c. bread crumbs
1 tbsp. grated onion
1 tbsp. grated celery
1/2 tsp. salt
1 tbsp. fresh parsley, chopped
Bread crumbs
1 egg, beaten with 1 tbsp. water
Butter

In medium, mixing bowl combine crab meat, egg, crumbs, onion, celery, salt and parsley with cooled binder sauce. Form into patties. Dust with bread crumbs and beaten egg mixture. Then dust in bread crumbs again. Fry in butter at 375 degrees until golden brown.
