ZUCCHINI MOCK APPLE PIE 
4 c. flour
2 c. sugar
1/2 tsp. salt
3 stick soft butter

Mix like for pie. Divide into 2 equal parts, put half into greased 9x13 inch pan. Bake 10 minutes at 350 degrees for glass, 375 degrees for metal.

FILLING:

Wash, peel, seed, and cut into bite-size pieces to make 8 cups. 1 c. sugar 1 tsp. cinnamon 1/2 c. crumbs

Cook zucchini and lemon juice until clear. Add sugar, and cinnamon and simmer 1 minute. Add 1/2 cup crumbs, pour over crust. To remaining crumbs, add 1 teaspoon cinnamon. Mix well, sprinkle over top of filling. Bake 35 minutes. When cool, cut into squares or bars. Delicious!
