BAKED POTATO CASSEROLE 
Several sm. baking potatoes
1 sm. onion, diced
1 jar sliced mushrooms, rinsed and drained
1 bell pepper, diced
2 c. grated Cheddar cheese
2 strips bacon
1 (16 oz.) container sour cream

Coat casserole dish with butter. Wash potatoes well and cut into rounds (do not peel). Layer casserole - potatoes, then onions, peppers, mushrooms, and cheese. Repeat as necessary and end with cheese. Top with 2 strips of bacon. Cover and bake at 350 degrees for 1 hour. Serve with sour cream.
