CHICKEN CORDON BLEU 
Boneless, skinless chicken breast halves
Thinly sliced Swiss cheese
Canadian bacon
butter
Mayonnaise
Seasoned bread crumbs

Pound the chicken breasts flat between two pieces of plastic wrap, using a meat pounder or a rolling pin. Spread a small amount of butter on each breast--about 1/2 teaspoon. Place your desired amount of Canadian bacon on top of the butter and the amount of Swiss cheese you would like on top of the bacon.

Roll the breasts up, trying to keep the edges tucked in. Secure with a toothpick. Brush the outsides of the chicken rolls with a thin layer of mayonnaise and roll them in the bread crumbs. Place the chicken in a baking dish and bake at 350 degrees for 45 to 50 minutes.
