FETTUCCINE WITH THREE CHEESES 
4 tbsp. butter
2 tbsp. flour
2 c. milk
1/2 c. shredded Gruyere cheese
1/2 c. shredded Gouda cheese
1/4 c. golden raisins
12 oz. Fettuccine noodles (fresh, if possible)
1/2 c. grated Parmesan cheese

Cook noodles in boiling salted water as package directs. Place noodles in serving dish, keep warm. Melt butter in medium saucepan, stir in flour and cook until bubbly. Gradually add milk, stirring until thickened. Remove from heat, add Gruyere and Gouda cheeses and raisins. Return to low heat and stir until cheeses are thoroughly melted. Immediately pour sauce over pasta and serve with grated Parmesan cheese.
