CRAWFISH STUFFED MUSHROOMS 
30-35 mushrooms
1 lg. onion, chopped
1/4 bell pepper, chopped
2 tsp. creole salt
1/4 tsp. red pepper
1 c. bread crumbs (or more)
1 tbsp. sherry
1 lb. crawfish tails or meat
1/2 bunch green onions
1 stick butter
1/2 tsp. white pepper
1/2 tsp. garlic powder
2 tbsp. olive oil
1/4 tsp. monosodium glutamate

Wash mushrooms and remove stems. Chop onions, green onions and bell pepper. Saute in butter. Add bread crumbs, crawfish and mushroom stems. Mix all together and add the seasonings. Cook in saucepan on low for 15 minutes. Pour in olive oil and sherry. Add more bread crumbs if needed. Stuff the mushrooms with this mixture. Make sauce.

SAUCE:

1 stick butter
2 tbsp. sherry
1/2 tbsp. olive oil
1 tsp. onion powder
Trace of garlic
1 tsp. creole salt
1/2 tsp. lemon juice
Touch of monosodium glutamate
