CRAWFISH SALAD 
2 lbs. boiled crawfish meat
1 doz. boiled eggs (chopped)
1 bag crab boil
1 bunch green onions (chopped)
3 onions (peeled) and quartered (yellow)
5 lbs. sm. red potatoes
4 stalks celery, chopped
Salt to taste
1 whole head of garlic
Mayonnaise

In a large pot boil potatoes, onions, garlic in crab boil and a little salt, until potatoes are tender. Drain.

In large bowl cut up potatoes and eggs (do not peel potatoes), mix in green onions, celery, squeeze garlic out of pods, and yellow onions. Then add crawfish meat and mayonnaise, mix all this well. Can be served at any seafood boil.

Serves 12.
