VEGETABLE MEAT LOAF 
1 c. oatmeal
1 sm. onion, chopped fine
1/4 tsp. salt and pepper
1/2 c. hot low sodium beef broth
2 egg whites or 1 egg
1 lb. very lean ground beef
1 1/2 c. chopped vegetables (broccoli, carrots, zucchini)

Combine all ingredients and bake in loaf pan 1 hour at 350 degrees.
