VEGETABLE MOUSSAKA | |
1 tsp. oil 1 sm. onion, chopped 1-2 garlic cloves, minced 2 med. tomatoes, chopped 1 tsp. dry basil 1/4 tsp. cinnamon Salt and pepper 1 tbsp. lemon juice 1 sm. eggplant 4 slices Swiss cheese In a saucepan brown the onion and garlic in the oil over medium heat. Add tomatoes, basil, cinnamon, salt and pepper to taste, and lemon juice. Slice eggplant into 1/2 inch slices, brush with oil and broil. Line 8 x 8 x 2 pan with eggplant, spoon sauce over slices and top with Swiss cheese. Bake at 400 degrees for 20 minutes or until bubbly. |
