IRISH POTATO SALAD 
4-5 Irish potatoes
1 bunch green spring onions
8 oz. sour cream
8 oz. mayonnaise
1 jar bacon bits

Peel Irish potatoes, slice and cook until tender. Alternate in large bowl: Irish potatoes, onions, mayonnaise, and sour cream mixture, and bacon bits. Better if prepared day ahead of serving.

I made this for a St. Patrick's Day party and it was a big hit. So much so, I was recently asked to make it again for another party. However, I could not find "irish" potatoes, so used golden yukon potatoes. Worked just as well I think. Like the recipe says, it is better the day after. And, so simple to make.
