IRISH POTATOES 
A St. Patrick's Day tradition!

1 (1 lb.) box confectioners' sugar
1 cup coconut flakes
5 tbsp. butter, softened
1/3 cup white Karo syrup
1 tsp. vanilla
cinnamon

Knead together coconut flakes and butter. Add remaining ingredients and mix well. Chill.

Roll into small balls and roll in cinnamon. Chill 1/2 hour or until firm. Store in refrigerator.
