TAMALE PIE 
1 (8 oz.) pkg. cornbread mix
1 lb. lean ground beef
1 pkg. chili seasoning
1 (8 oz.) tomatoes with green chilies
1 (16 oz.) kidney or pinto beans, optional
1 (16 oz.) drained whole kernel corn

Mix cornbread (unsweetened preferable) according to instructions. Set aside. Brown ground beef and drain. Mix in chili seasoning and tomatoes with green chilies. Add kidney beans and corn stirring to mix thoroughly.

Spray a 2-3 quart casserole dish with cooking spray. Pour chili mixture into casserole dish. Spread cornbread batter evenly over top of meat. Bake at 350 degrees for 25-30 minutes.
