SATURDAY NIGHT REAL BAKED BEANS | |
1 lb. beans 1 onion 1/2 tsp. baking soda 1 tsp. salt 1 tsp. dry mustard 1 tsp. cinnamon 1/4 c. molasses 2 inch square salt pork Water Wash beans; soak overnight in 6 cups water. Drain water, put beans in bean pot and cover with water. Chop and add the onion. Add remaining ingredients. It is best to cut the salt pork in a couple of pieces or score it. Cover and cook at 250 degrees for 4 1/2 to 5 1/2 hours. It may be necessary to add more water during cooking to maintain water level. Remove from oven; let stand 15 minutes. Serve. HINTS: There are several varieties of beans that may be used in this recipe. A few are red kidney, navy, pinto, Jacobs; cattle, cranberry, small white, soldier, yellow eye. A change of taste can be had by substituting maple syrup or honey for the molasses. |
