BAKED EGGPLANT 
1 med. size eggplant
2 c. bread crumbs
1 or 2 eggs
Milk
Flour
butter
Salt & pepper

Remove stem and peel eggplant. Slice into 1/2 inch thick pieces or slices. Dip each slice into flour, egg and milk mixture and then into bread crumbs, covering well on both sides. Place on well greased baking sheets and dot each slice with butter. Dust with salt and pepper. Bake at 350 degrees for 45 minutes or until done. Makes 2 to 4 servings.
