NORWEGIAN PANCAKES 
1 c. oatmeal
2 c. buttermilk
1 c. flour
1 tsp. baking soda
2 tbsp. sugar
4 egg yolks, beaten
A little milk to make it pancake consistency
4 egg whites, beaten stiff

Soak oatmeal in buttermilk overnight at room temperature. Add flour, soda, sugar and beaten egg yolks to above and beat well by hand. Add a little milk to make it pancake consistency. Then beat 4 egg whites until stiff and fold into batter. Very light thin pancakes and delicious. Very healthy also.

Makes enough for 3 people, if you have more double recipe except only use 6 eggs instead of 8. Enjoy!
